Sweet & Sassy Salads

Salads are typically savory, but can also be sweet! Savory salads normally have heavy dairy dressings or processed croutons, sweet salads have strawberries and an organic vinaigrette (and I'm saying that savory salads are bad, I personally LOVE them.) Sweet salads aren't covered in sugar and unhealthy, if anything they are better than that ranch covered salad you had last night! Sweet salad toppings can range anywhere from peanuts to apples. The only problem with them is that they never seem to fill you up the way savory ones do, and the toppings are more limited. Luckily, Simply Eats is getting ready for summer with new sweet salad recipes!
Vinegar-less Sweet Salad:
Ingredients:
2 cups of walnuts - halved
1 package of strawberries - thinly sliced
1/2 cup granulated sugar
2 table spoons butter/ 3 table spoons vegan butter
1 package of spinach (or your favorite salad mix)
1 table spoon olive oil (oregano oil works best)
Directions:
1.) In a non-stick skillet, add walnuts, sugar, and butter over medium heat.
2.) Over the course of about five minutes, stir so that it doesn't burn.
3.) After, immediately transfer candied walnuts onto parchment paper so that they are evenly sitting on the paper.
4.) Let nuts cool.
5.) Transfer a serving of spinach (or salad mix) onto a plate and drizzle with olive oil.
6.) Spread preferred amount of strawberries onto salad.
7.) Sprinkle candied nuts on the salad and enjoy!
